We got our first Katahdin Lambs in early 2022. Katahdin is a hair sheep, so they do not require any shearing. They are also a parasite resistant breed. As with most hair sheep they have a milder flavor. Our Lamb are rotationally grazed across the farm. They graze on grasses, clovers, and just about everything else they can get to. We do not feed grain like many others do. While they do like it, it is not a healthy feed. Sheep, like cows and goats, are not intended to eat such foods. We believe that grain feeding is detrimental to the quality and flavor of the meat. This may be why many people dislike Lamb. If they would ever try a well prepared cut of 100% grass fed hair-breed Lamb, I am pretty sure they would change their minds. In my opinion, a nice rare Lamb chop is as good or better than any ribeye I have ever had. A Lamb rib roast – well, it really doesn’t get any better than that.
Speaking of grass fed, when we say grass fed, we mean it. We don’t mean hay, although most producers would consider that the same thing. Many farms will feed hay for more than half the year. We are managing our farm to increase the amount of year round forage available. Adding forages like birdsfoot trefoil and forage tree crops help us get through the hot, dry summers. Comfrey is becoming a larger part of their forage. in addition to being high in protein Comfrey is a dynamic accumulator. This means it is high in many different minerals making it a good substitute for mass produced mineral supplements.
We have our first offering of cuts and boxes for sale now! A 20lb box is about half a Lamb. An example of a box would contain the following…

We will also sell whole animals if that is something you are interested in. We charge a set price and you would submit your cut selection and pay all butcher fees (see below). There would be a decent saving over buying two boxes if you chose the less expensive paper wrapping. We must use the plastic vacuum wrap in order to meet USDA requirements.

$478 ESTIMATED total – ESTIMATED 45lbs into your freezer ($10.62/lb into the freezer)
REF will deliver your Lamb to the butcher (which we have already scheduled). You submit you cut instructions to the butcher and pay the harvest and wrap fees when you pick it up.
